If you read shannaro's scanlations, you will see that in chapter 255's "high quality" release, they made a page explaining the rings of the akatsuki. They provided the kanji and the romanji for the words... i'll try to explain the kanji, that ok?

Akatsuki Leader: He has no god manifestation
Deidora: seiryuu (green dragon)
(next in command, name unknown): byakko (white tiger)
Itachi: suzaku (Red Sparrow)
zetsu: genbu (warrior boar)
orochimaru: kuuchin (i have no idea about this kanji, someone help me)
kisame: nanju (north fighter)
next in command, unknown again: hokuto (south fighter)
same as the above: santai (3 stages)
sasori: gyokunyo (jade goddess)

This is from my limited understanding of kanji words. I didnt use a translator, so I'm probably wrong for some. Discuss please, and correct me where I'm wrong. As more Akatsuki members are revealed, I'll change the post.

I can't believe that Deidara is stronger than Itachi, Orochimaru and Sasori. She was taking orders from Sasori like he was her superior, and it looked like she had some trouble fighting Gaara. And I still can't believe that Itachi is stronger than Orochimaru.

Leader: Kanji for Zero
Deidara: Kanji for Green, Spring, or Clear (it has several meanings)
Itachi: Kanji for Scarlet, Red
Zetsu: Kanji for Boar
Orochimaru: Kanji for Empty (literally) but I guess it was meant to be Sky
Kisame: Kanji for South
Sasori: Kanji for Jade (literally) but I think it was meant to be Sphere
