Well it really depends on what you are asking...
For instance, you could be asking why the anime series ended... or you might be asking how it ended O_o
Or you could be asking how the manga series (the true series that went on longer) ended, or why it ended...
O_o
So select one or a few of those and I'll answer to the best of my ability

The end of the anime's seventh season (the end of the actual anime) wasnt ment to be the end of the animated Ranma stories, which is why the OAV's began directly after episode 25 of season 7 (the final episode) aired. The OAV's are for the most part stories from later in the manga, such as the intoduction of Miss Hinako, the Orochi storyline and others... it also included original stories, such as the 'One to Carry On' storyline. Unfortunatly, after the last OAV was made, 'The Two Akanes, "Ranma, Look at Me!"', the animation company that Takahashi was associated with for the animation of Ranma, Kitty Animation, went out of buisness.
That it why they stopped making episodes/OAV's, and unless Sunrise, the company that Takahashi is now associated with, decides to animate the last few story arcs of Ranma, it will remain incomplete.
