Shapeshifter by unsanity. Search it on google, I, uh, got mine for free from connections. If you use it for thirty days, decide you like it, PM and I can get them too hook you up.

www.macnn.com's forums (gui customization) has a bunch of themes, shapeshifter can provide you with some and interfacelift has tons.

Also, I do not use dashboard, but rather yahoo's Konfabulator. I like the fact that it does not take me an hour to load up the widgets.
