Don't ignore that Sokka and Katara are two different characters, who by no means have to react in the same manner to a circumstance. o.O
It seems to me that Sokka reacted by acting less mature than he really is, while Katara did the exact opposite. >.>
And it is kinda funny how you mentioned nothing about The Cave of Two Lovers. Which as I said, was the second episode I ever saw of Avatar. Definitely Katara/Aang in that one. That was my impression and I had no previous bias.
