Well its a bit more complex than that as to why she'd win.

1. Erza is immune to genjutsu because of her magic eye.

2. Erza can simply re-equip her many different types of armor if she happens to get caught with Amaterasu making that useless.

3. Erza is shown to have strong destructive magical power which would allow her to brake Susanoo if she targets it from behind.
