I tried my hand at making Ice Cream Sandwiches the other day. I'm not sure if Tabitha was more impressed that I took the effort to bake something, that I didn't fuck it up, or at the quality of the result. Regardless, she said they tasted great, so here:
Preheat oven to 350F. Grease 10x15 inch pan, line with parchment paper leaving enough to grab overhanging on the sides.
Whisk together 1/2 cup melted unsalted butter and 1/2 cup white granulated sugar. Add 1 large egg and 1 tsp vanilla extract, then also add 1/2 cup all purpose flour, 1/4 cup unsweetened cocoa powder and 1/4 tsp salt (that's a stupid small measurement, so I just put in what I thought looked good).
Stir until smooth, spread evenly on pan and bake for 10-12 minutes. Remove, let cool on wire rack, then cut in half. Place one half (top side down), spread softened ice cream (Breyer's Double Churned Vanilla FTW) on it, place the other half on (top top side up). Wrap in plastic wrap, place in freezer until hard.
If you need them to look fancy, you can then cut off the edges to make them all square and shit, otherwise just cut it out evenly into 8 "regular" sized ice cream sandwiches. Tabitha mentioned they are a little more filling though, so 12 smaller ones would likely be best if you're bringing them to a potluck or something like that.
