I'll add one thing the video alluded but didn't really address it fully: Episode I would be better without all the unnecessary cameos. Why add C3PO, R2D2, Jabba and Yoda if they do little to nothing? It's like they think the fans of the original trilogy are drooling morons that are instantly satisfied with flashy appearances with very little substance.

Also, another actor for Anakin would improve a lot. I still can't look at him and see anything but the selfish brat from "Jingle all the Way".
