I went to high school in Florida. One of the most popular dishes in Puerto Rico is called Mofongo. Basically fried green plantain mashed together with garlic, broth, bits of bacon and stuffed with either shrimp, chicken, crab, or beef. It's usually served with fried meat and chicken broth soup. The broth of the soup is typically poured over the mofongo.
We also have Pasteles de Arroz. It's also made from grated yellow and green plantains, pumkin, and potato which is turned in a mass or as it's called "masa". The masa is then stuffed with fully cooked rice and chicken, pork, or crab meat.
