ASSUMING this could be done, Id say yeah.....Itachi would be the newest member of the Orochimaru Slave Club. That's what the cursed seal does. Orochimaru made it so ofcourse it works like a charm. I think Itachi has some of his own Kinjutsu techniques that might possibly be able to either get rid of the seal or turn the tables on Orochimaru. emphais on possibly. Some folks believe Orochimaru has already tried to curse Itachi...... he got a burned up hand in a jar for all his troubles too.
