i agree with you, since japanese uses KATAKANA to spell his name, and they put his name into romanized japanese, therefore its GAI, since theres no sound/spelling for GUY. its like how they spell america in japanese.....AMERIKA, etc etc.

PROPER EXPLANATION:

Gai is a SLANG in cantonese for prostitutes...but literally meaning CHICKEN. and also GAI-sensei's name and the cantonese word 'GAI' sounds completely different. Gai-sensei (sounds like GUY), whereas GAI (prostitute in canto) sounds like GAY lol with a higher tone.

GAI (canto) = is just a way of spelling the sounds of cantonese words in english alphabet, every chinese probably use a different way to spell that word, since theres no format for cantonese pinyin, unlike mandarin
