bad luck for me theres a shit ton of cameras at my work but if you enter the managers office all he looks are the warehouse the cashiers cameras and the hall to the bathroom... but theres always a way to steal...

As long as anyone is not in a place where they should expect reasonable privacy (the bathroom, their own house, etc.) anyone can take any pictures or videos of them they want, so long as the person capturing the images is on public property or have the property owner's permission.
People who enter a store should expect to be recorded. If you don't want to be on a crap quality, grainy video you can barely recognize anyone in, then you can choose not to enter the store.
Also, I'm still wondering who's going to prevent a store's management from looking at whatever security footage they damn well want to.

Despite these technicalities, I think a fight breaking out in your store would be more than enough "reason to suspect something", were the cameras able to record.
